No - those aren't pieces of cheddar ground into the beef! That's super beta-carotene-rich Jersey fat! Our retired dairy cows spend their entire lives on pasture, and the resulting beef is some of the most flavorful, nutritious beef you'll find.
Dairy cows aren't well known for their resulting beef, because they don't produce nearly as much as the beef breeds do. (In contrast, beef breeds aren't known for their milk, because they don't produce as much as dairy breeds.)
